Get Organized!
Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.
Get Prepped!
In a small pot, combine sugar and water and bring to a boil over high heat. Allow the mix to boil until the sugar is completely dissolved, roughly 1 to 2 minutes. Remove from the heat and allow to cool to room temperature.
Roughly chop the tomatoes. Combine in a blender with the basil leaves and salt and blend until smooth. Pass through a fine mesh strainer.
Get Cooking!
Combine the tomatoes with the sugar and water mixture and mix well. Place into the ice cream maker and follow the directions indicated by the manufacturer. Alternatively, if you don’t have an ice cream maker, you can place this mix into the freezer and whisk every 10 – 15 minutes while freezing to form a granita, which will have a more firm texture but it very refreshing on a hot day!
