Biscuits

Ingredients

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat the oven to 400°F. 

Using a fork or knife, pierce a few holes in the skin of 2 sweet potatoes. Place onto a parchment lined baking sheet and bake in the oven until a fork inserted goes through without resistance, roughly 2030 minutes. Remove from the oven, allow to cool slightly and mash or blend the flesh of the sweet potato, discarding the skin. 

In a bowl, sift together the flour, salt, baking powder and baking soda and whisk until combined. 

Add the cold, cubed butter to the flour mixture and gently work the butter into the flour with your fingers. Continue to do so until the butter cubes have reached about the size of a pea. 

In a separate bowl combine the sweet potato and milk and mix until smooth. Add this to the dry mixture and fold with a spatula until well combined. They mix may look dry and crumbly at first, but continue mixing until it comes together. Once the dough forms into a ball, turn out onto a floured surface. 

To make the maple butter, mix the butter very well with the salt and maple syrup and add more to taste if desired. Either place into a piping bag and pipe into desired shapes or simply refrigerate to enjoy later. 

Get Cooking!

Using your hands, or a rolling pin, press the dough into roughly a square shape. Continue to press the dough until it is roughly ½ an inch thick, then fold the dough in half and press down again. Repeat this process one more time, then press or roll until it is roughly ¾ inch thick. Cut into desired shape and then place onto a parchment lined baking sheet.

Bake in the preheated oven until the biscuits have risen and golden brown, approximately 25 minutes (or longer if rolled out thicker). Remove from the oven and let cool for 5 minutes before enjoying with maple butter or topping of your choice.
