Ingredients
2 cups whole grain spelt flour2 teaspoons baking powder1/2 teaspoon baking soda1/4 teaspoon salt1/4 teaspoon ground cinnamon2 cups buttermilk2 eggs1 teaspoon vanilla1 tablespoon maple syrup3 tablespoons salted butter, melted

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Melt the butter and set aside to cool slightly.

In a large bowl, whisk together the spelt flour, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, whisk together the buttermilk, eggs, vanilla, and maple syrup.

Get Cooking!

Pour the wet ingredients into the dry ingredients. Stir gently until just combined — some lumps are okay!

Add the melted butter and fold it in until incorporated.

Heat the waffle iron and lightly grease if needed.

Spoon batter into the centre of the waffle iron and cook according to your iron’s directions, usually 35 minutes or until golden brown.

Serve warm with your favourite toppings such as fresh fruit, yogurt, or maple syrup.
