1 1/2 cups pitted dates1/3 cup tahini1/4 cup maple syrup1 teaspoon salt4 -5 cups puffed amaranth1/4 cup pumpkin seeds, chopped1 tablespoon black sesame seeds

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Roughly chop the dates if they are very large.

Measure out all of the remaining ingredients.

Lightly chop the pumpkin seeds.

Get Cooking!

Add the dates, tahini, maple syrup, and salt to a food processor. Blend until the mixture forms a sticky paste.

Scoop the mixture into a large bowl. Add puffed amaranth, pumpkin seeds, and black sesame seeds. Stir well with a wooden spoon until everything is evenly mixed.

Roll the mixture into 12 small balls. If the mixture is too sticky, lightly wet your hands with water.

Place the energy balls on a plate or tray and chill in the fridge for 15 – 20 minutes to firm up. Enjoy!
