Quick Pickled Beets

Pickled beets made easy! Simmer beets with apple cider vinegar, sugar, mustard seeds & spices for a tangy, sweet crunch. No canning required! Perfect for salads, sandwiches, or snacking.

3 cups red beets1 cup apple cider vinegar1 cup water3 tablespoons sugar1 tablespoon salt1 teaspoon mustard seeds1 teaspoon black peppercorns

Directions

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Peel the beets, then chop into 1” cubes. Place into a bowl and set aside.

Measure all remaining ingredients into a medium pot.

Get Cooking!

Place the medium pot over high heat with all of the picking ingredients, except the beets. Once the liquid has boiled, add the beets and allow the liquid to return to a boil for 1 minute.

Return the beets with the liquid to the medium bowl, then cover with saran wrap and let sit for 15 minutes.
