Get Organized!
Gather your mise en place; get together all of the equipment and ingredients needed for the recipe before you get started.
Get Prepped!
Shred the maitake mushrooms with your hands into thin strands. Halve the onion lengthwise, remove the outer papery layers, and trim both the root and tip before thinly slicing the onion.
Finely grate the ginger and mince the garlic.
In a small bowl, combine all the seasonings: soy sauce, mirin, rice vinegar, maple syrup, sesame oil, shichimi togarashi, toasted sesame seeds, and ½ cup of water.
Get Cooking!
In a large frying pan, heat olive oil over medium heat. Add the onions and sauté, stirring occasionally, until they are soft and translucent, approximately 10 to 15 minutes.
Incorporate the mushrooms, cooking them with the onions for an additional 15 to 20 minutes, until both are softened and beginning to caramelize. If necessary, add a few drops of water to prevent burning or excessive browning.
Stir in the seasonings and allow the mixture to simmer for another 15 to 20 minutes, until the liquid reduces and thickens to a jam-like consistency.
Taste and adjust seasoning with salt as needed.
