250 grams maitake mushrooms1/4 cup parmesan cheese, finely grated2 tablespoons soy sauce1 tablespoon olive oil1 tablespoon black vinegar1 tablespoon sesame oil1 tablespoon tomato paste1 teaspoon five-spice powder2 teaspoons garlic powder1/4 teaspoon pepper Salt to taste

Get Organized!

Gather your mise en place; get together all of the equipment and ingredients needed for the recipe before you get started.

Get Prepped!

Cut or tear the mushrooms into medium-sized pieces.

Finely grate the parmesan cheese.

In a bowl, combine the marinade ingredients: soy sauce, olive oil, black vinegar, sesame oil, and tomato paste. Whisk until thoroughly blended.

Gently massage the marinade into the mushrooms and allow them to sit for 2 – 3 hours.

In a separate bowl, mix together the five-spice powder, garlic powder, onion powder, black pepper, and salt to taste.

Get Cooking!

Preheat a large frying pan over medium high heat, and cook the maitake mushrooms for about 10 minutes, until the mushrooms are lightly browned and caramelized.

Strain the mushrooms from the marinade and evenly sprinkle the spice mixture over them.

Preheat the oven to 250°F and arrange the mushrooms on a baking sheet lined with parchment paper. Bake for approximately 2 hours, or until they are dried and crispy.

Remove the mushrooms from the oven and allow them to cool on a wire rack. Season with additional salt if desired, and once completely cooled to room temperature, store them in an airtight container.
