Lumpia

Ingredients
1 red onion, sliced3 cups bean sprouts1 cup green beans, sliced1/2 cup carrot, julienne1 cup cabbage, chopped1/4 cup grapeseed oil Salt to taste40 large fresh lumpia wrappers

Vinegar Dipping Sauce

Ingredients
1 cup white vinegar4 cloves garlic, finely minced1/4 cup red onion, minced1 red chili minced, or dried chili flakes (optional)1 tablespoon brown sugar Salt to taste Pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Peel and finely julienne the carrots. Very finely slice the onions.

Cut the ends off of the green beans, and very finely slice them. Very finely chop the cabbage.

Measure the vinegar, and brown sugar for the dipping sauce.

Finely chop the garlic, red onion, and red chili if using to the dipping sauce. Mix it together well and season it with salt to taste.

Get Cooking!

Preheat the pan over medium high heat. Add the oil, and all of the vegetables for the lumpia; the carrots, cabbage, onion, and beans. Saute until softened, about 4 minutes. Season with salt to taste.

Strain the vegetables to get rid of the extra juices, and let cool.

Add a couple of tablespoons of filling evenly in a row on the spring roll wrapper close to the end. Tuck in the ends and roll the lumpia tightly and continue rolling with the rest of the filling.
