Ingredients
1 recipe Kale Pesto2 large chicken breast, sliced thinly1/4 cup olive oil, plus more as needed1 pint cherry tomatoes, halved1 green zucchini, diced1 yellow zucchini, diced Salt and pepper to taste1 pound fresh pasta Parmesan to garnish

Directions

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Dice the zucchini and halve the cherry tomatoes. Measure out the olive oil.

Thinly slice the chicken.

Get Cooking!

Heat a large pan over medium high heat, and add olive oil. Add chicken to pan, season well with salt and pepper, and saute until chicken is cooked through.

Remove chicken from the pan, add another splash of olive oil if needed and add zucchini. Saute for 1 minute, and add cherry tomatoes. Add chicken back into the pan with vegetables, and when pasta is cooked, add to the pan. Add pesto to taste, and garnish with parmesan cheese.
