Yuca en Mojo

This yuca recipe made with a simple garlic mojo might just be the most flavourful side dish you’ll ever make!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat an oven to 400°F.

Place the yuca in a pot of salted water and bring to a boil. Let simmer for 20 to 30 minutes, checking with a fork when it is tender. As soon as the yuca is pierced by the fork easily, strain from the water.

Mince the garlic very finely and place into a small mixing bowl. Slowly pour the oil into the garlic while whisking very well. This sauce is the mojo.

Chop the chives very finely.

Place the drained yuca onto a baking sheet lined with parchment and roast in the oven for 10 – 15 minutes until crispy.

Remove the yuca from the oven and toss with the mojo (oil and garlic sauce). Plate and garnish with chopped chives.
