Ingredients
2 pounds pork back bones3 pounds chicken bones1 onion, roughly chopped12 garlic cloves, smashed1 (3 inch) piece of ginger, peeled and sliced2 leeks, washed and chopped24 green onions, washed and chopped3/4 cup dried shiitake mushrooms

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

In a large pot, place the pork and chicken bones and just cover with cold water. Bring to a boil over high heat. As soon as the pot boils, remove from the heat, drain off the water and rinse the bones with cold water.

Wash and chop all vegetables.

Preheat a large frying pan over high heat until just beginning to smoke. Place all of the chopped vegetables and cook for a few minutes until lightly charred all around.

Get Cooking!

Add all ingredients to a large pot and add 8 litres of cold water. Bring to a boil over high heat, then drop to medium heat and allow it to simmer quite actively for 8 hours total. After simmering, strain and season accordingly.
