Get Organized!
Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.
Get Prepped!
Grease a 9 x 9 inch baking pan generously with butter.
Preheat the oven to 350°F.
Sift the flour, baking soda, baking powder, salt and spices through a mesh sieve into a bowl and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, combine butter and sugar and beat on medium-high speed until light and fluffy.
Add the vanilla, then alternate between adding the tomato soup and flour mixture, adding it all in about 3 batches.
Get Cooking!
Pour the batter into the prepared baking pan and bake in the preheated oven for 30 – 40 minutes, until a toothpick inserted in the center comes out clean. Allow the cake to cool then serve with desired toppings- we like whipped cream or tomato sorbet with ours!
