Strawberry Lime Paletas

This popsicle uses the addition of coconut milk to add a touch of creaminess, and it doesn’t get more refreshing than this!

1 pound strawberries1/2 cup coconut milk1/4 cup lime juice1/3 cup maple syrup2 tablespoons lime zest

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Wash the strawberries well and remove the hull, then cut in half.

Use a rasp to remove the lime zest before juicing. Cut the limes in half and juice with your hand or a reamer.

Get Cooking!

In a high speed blender, combine strawberries, coconut milk, lime juice, lime zest and maple syrup.

Pour this mixture into popsicle molds. Let freeze for 30 – 45 minutes, then place the popsicle sticks in and leave until completely frozen.
