Savoury Ham & Asparagus Cheese Muffins

These muffins are perfect for lunch on the go or dining al fresco! Simply omit the ham to make these veggie!
12 muffins
1 cup all purpose flour1 cup spelt flour (can use all purpose)1/2 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/4 teaspoon garlic powder2 cups cheese, grated (cheddar, asiago, parmesan, feta)1 cup asparagus, woody ends trimmed and cut into thin coins2 green onions, thinly sliced1 cup spinach, chopped5 slices of deli ham, diced (optional)1 egg, whisked1 cup milk1/2 cup plain yogurt

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat the oven to 350°.

Measure out the flour, baking soda, baking powder, salt, garlic powder, milk and yogurt.

Grate the cheese.

Wash and thinly slice the asparagus and green onions.

Dice the ham.

Wash and pat dry the spinach then roughly chop it.

Crack the egg into a small bowl and whisk with a fork.

Get Cooking!

In one large mixing bowl stir together the flour, baking soda, baking powder, garlic powder, salt, spinach, cheese, asparagus, green onions and ham.

In a separate bowl stir together the milk, yogurt and egg.

Using a spatula, combine the wet ingredients into the dry until just incorporated.

Place the muffin liners in the muffin tin and spoon out approximately 2oz of batter into each liner (or just equally divide).

Bake in the preheated oven for 20 minutes or until golden brown and cooked.
