Refried Beans

Making your own frijoles refritos or refried beans gives you a much better texture and flavour then the canned stuff.

2 cups refried beans
Ingredients
1 tablespoon canola oil1/2 medium onion, diced2 cloves garlic, minced1 teaspoon ancho chili powder, or other chili powder1 (15-ounce) can pinto beans, preferably low-sodium, drained and rinsed2/3 cup vegetable broth, plus more if needed salt to taste pepper to taste2 tablespoons chopped fresh cilantro leaves

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Measure out the oil, chili powder and broth.

Peel and dice the onion and mince the garlic.

Open the beans and drain and rinse them.

Chop the cilantro.

Get Cooking!

Heat the oil in a large skillet over medium heat. Add the onion and cook until tender, about 3 minutes.

Stir in the garlic and chili powder and cook for 1 minute more.

Stir in the beans and chicken broth and cook until the beans are warmed through, about 5 minutes.

Mash the beans coarsely with the back of a wooden spoon, adding more vegetable broth to moisten, if needed.

Season with salt and pepper, to taste. Stir in the cilantro.
