200 - 280 grams pizza dough80 grams peeled tomatoes100 grams dior di latte mozzarella Fresh basil to taste Extra-virgin olive oil Salt

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Scale out your prepared pizza dough to 200280 grams. Stretch the dough by hand gently to make a pizza that is 2235 centimetres with a well defined crust.

Get Cooking!

Gently crush the san marzano tomatoes by hand into a bowl and season with salt to taste.

Add the pizza sauce onto the pizza staying away from the crust. Rip the mozzarella into pieces and place all over the tomato sauce. Cook for approximately 90 seconds in a wood fired oven, turning frequently. Remove the pizza from the oven and rip fresh basil onto the pizza, drizzle with olive oil in a circular motion and season with fine sea salt.
