Maple Tamagoyaki

Tamagoyaki is a sweet and savoury Japanese rolled egg omelette, that is just as much fun to make as it is to eat! This recipe uses maple to sweeten the eggs, and is a great addition to breakfast, lunch, or makes a great snack!

2 eggs1 tablespoon maple syrup2 fluid ounces soy sauce2 tablespoons water (or dashi) Grapeseed oil as needed

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Crack eggs into a medium sized bowl.

Add maple syrup, soy sauce, and water to the eggs and whisk together well.

Get a small bowl or ramekin and add about 2 tablespoons of grapeseed oil. Fold a piece of paper towel into a small square about 2 inches, this will be used to grease the pan.

Get Cooking!

Heat a small nonstick frying pan over medium low heat. Let the pan heat up for a minute or two. Take your paper towel square and dip it in oil, and wipe the bottom of your pan to grease it.

Whisk egg mixture again and pour about Ā¼ of the egg mixture into the pan, tilting the pan to let the mixture spread to all of the sides.

Let eggs cook until bottom is sit and top is almost set, then fold in the sides slightly to form a rectangle.

Starting with the side closest to you, roll the omelette up into a log using the silicone spatulas.

Grease the pan again with the paper towel, moving the omelette out of the way to do so. Place the omelette roll at the side of the pan, and pour the next Ā¼ of the egg mixture into the pan, and tilt as you did the first time.

Repeat this process rolling up the omelette, and greasing and pouring more egg two more times until all of the egg mixture is used up.

Roll your completed omelette in a piece of paper towel to help shape it, leave it to sit for about 4 minutes.

Slice off the ends of your omelette to clean up the edges. Slice into 6 pieces and serve.
