6 cups ice, crushed1 cup sweetened condensed milk1 cup coconut cream1/4 cup icing sugar1 teaspoon vanilla extract1 Ube (purple yam)1 cup coconut milk

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Peel the ube and dice it into 1 cm pieces. Place in a medium pot with coconut milk, and simmer until soft. Mash until smooth and let cool.

Combine coconut cream, icing sugar and vanilla extract in the bowl of a stand mixer fitted with whisk attachment. Whisk until cream becomes stiff. Remove from the mixer and place into the freezer in a shallow pan.

Crush the ice in a food processor and set aside in the freezer.

Begin by placing crushed ice in a glass or bowl. Top with sweetened condensed milk, whipped coconut cream, and any fruit or garnishes you would like!
