Banana Bread

This isn’t your average banana bread! Loaded with your favourite fruits and nuts, this makes a delicious snack, dessert, or even breakfast!

Ingredients
1 cup dried fruit- whichever type you like! We used apricots, cranberries and figs!1/3 cup orange juice1/2 cup butter1 1/3 cups whole wheat flour2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/2 cup sugar Zest of 1 orange2 eggs1 cup mashed ripe banana (about 2 large bananas)1 cup nuts, chopped- whichever type you like! Butter for greasing the pan

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Using a fork mash and then measure out the banana

Measure the flour, baking soda, baking powder and salt and mix together in a bowl

Measure out the dried fruit, butter, sugar, nuts and zest and juice the orange.

Get Cooking!

Start by cutting up the dried fruit so that all of the pieces are roughly the size of a raisin.

Place the fruit in a small pot with the orange juice and bring to a boil. Remove the pot from the heat and let cool completely.

Preheat the oven to 325F. Using your fingertips or a piece of paper towel grease the loaf pan with butter.

Stir in the sugar and orange zest with the mashed bananas.

Stir in one egg at a time and then add the poached fruit and nuts.

Stir in flour mixture in three batches and add the melted butter.

Scrape the batter into the loaf pan and bake and bake for 20 – 25 minutes or until a toothpick inserted into the centre comes out clean.
