Flan de Coco

This popular dessert from Latin America is so simple and delicious! The key to making this crowd pleasing dessert; be careful to not let the caramel burn and when blending your ingredients, make sure everything is fully incorporated before adding the next one.

Ingredients
8 eggs1 can of evaporated milk1 can of sweetened condensed milk1 1/2 cups whole milk1 cup cream cheese2 teaspoons lime juice3/4 cup shredded coconut

Caramel

Ingredients
3/4 cup sugar2 tablespoons water

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

In a small pot combine water and sugar for caramel. Cook over low heat, not stirring but just swirling the pot when needed until the sugar has turned golden brown. Be very careful, once the sugar begins to caramelize it will happen very quickly! Do not walk away from this pot!

As soon as sugar has browned, place in the bottom of ramekins that the flan will be served in.

Preheat the oven to 350°F.

In a high speed blender combine condensed milk, evaporated milk, whole milk and cream cheese and blend until smooth.

Add eggs to this mixture, while blending, one at a time. Wait until the previous egg is fully combined before adding the next one.

Add the vanilla and lime, then pour mixture into a bowl and whisk in the shredded coconut.

Fill the containers that the caramel was placed in the rest of the way with this mixture.

Get Cooking!

Place filled containers into a hot water bath and bake in the oven at 350°F for one hour. The flan should still have a very nice ​“jiggle” to it when it is done.
