Tropical Tomato Salad

This flavourful salad epitomizes Caribbean flavours. With sweet and juicy fruits and a tangy dressing, it makes the perfect addition to any Caribbean meal!

4 roma tomatoes2 tangerines1 avocado1/4 pineapple1/4 basil

Dressing

Ingredients
1 cup strawberries1/4 cup balsamic vinegar1/2 cup grapeseed oil Salt to taste Pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Using a sharp knife, cut the tomatoes in half lengthwise. Remove the core. Scoop out the seeds. Slice the tomato into thin, 3 – 4 centimeter strips, and then into 3 – 4 centimeter cubes.

Remove the core from the pineapple and cut into 3 – 4 centimeter cubes.

Remove the skin of the tangerines and cut into large pieces.

Cut the avocado in half around the pit. Remove the skin and discard the pit. Cut the avocado into large pieces.

Remove the basil leaves from the stem and slice them very thinly.

Get Cooking!

In a high speed blender, combine the strawberries and balsamic vinegar. Blend until smooth.

Slowly add the grapeseed oil while blending. Season with salt and pepper.

Combine all ingredients in a large bowl and mix with dressing.
