Dilled Crunchy Sweet Corn Salad with Buttermilk Dressing

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.
Get Prepped!
Slice the shallot thinly.
Peel the corn.
Quarter the cucumbers lengthwise, then cut crosswise into 1 centimetre dice.
Dice the red pepper after removing seeds and ribs.
Mince the dill and parsley.
Mince the onion for the dressing.
Finely mince the garlic.
Crumble the feta cheese.
Get Cooking!
Bring a large pot of water to a boil, and cook the corn for 5 minutes. Let cool, then cut the corn kernels off the cob.
In the large bowl, toss the corn kernels to separate them. Add the shallot, cucumbers, red pepper, dill, and parsley. Mix gently with a spoon.
In the small bowl, whisk together the buttermilk, yogurt, vinegar, onion, and garlic. Slowly drizzle in the olive oil while whisking until smooth and combined. Season with salt and black pepper.
Drizzle the dressing over the salad just before serving. Garnish the salad with crumbled feta cheese.
