Colour Changing Lemonade

Make a magical and refreshing lemonade that changes colour right before your eyes

Blue Tea4 butterfly pea flower tea bags (or 2 tablespoons dried butterfly pea flowers)2 cups hot water Lemonade1 cup freshly squeezed lemon juice (about 4–6 lemons)2 1/2 cups cold water1/2 cup honey or simple syrup (adjust to taste) Simple Syrup (Optional)1/2 cup granulated sugar1/2 cup water

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients. 

Get Prepped!

Bring 2 cups of water to a boil. Pour the hot water over the butterfly pea flower tea bags (or dried flowers) and let steep for 5 – 10 minutes, until the water becomes a deep blue. Remove the tea bags or strain out the flowers. Allow the tea to cool.


For simple syrup (optional), in a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from the heat and let the syrup cool before adding it to the lemonade.


Wash the lemons. Cut them in half and squeeze the juice into a measuring cup, removing any seeds.
Measure the cold water and sweetener.
 

Get Cooking!

Pour the cooled blue tea into a large pitcher.

Add the cold water and honey or simple syrup. Stir until the sweetener has dissolved.

Just before serving, slowly pour in the fresh lemon juice. Watch as the lemonade changes from blue to shades of purple and pink! Stir gently to combine.

Serve immediately.
