1 teaspoon fennel seeds2 tablespoons olive oil1 tablespoon white wine vinegar6 stalks celery3 apples1 tablespoon tarragon, minced1/3 cup parsley leaves, chopped Salt to taste Pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

In a small frying pan over medium heat, place the oil and fennel seeds. Heat just until the fennel seeds start to bubble and become fragrant, then remove from heat and place into a bowl and set aside until cooled to room temperature.

Whisk the vinegar into the bowl with the fennel seeds and oil, then season with salt and pepper to taste.

Cut the apple into quarters and remove the core. Slice thinly.

Slice the celery thinly on a steep bias.

Remove the parsley leaves and tarragon leaves from the stem and chop finely.

Get Cooking!

Combine all ingredients in a bowl and mix until well coated. Season with salt and pepper, and let stand at least 30 minutes before serving.
