Caprese Salad

When you have ripe, local tomatoes you don’t need to add much to them to make them shine. This salad that features the colours of the Italian flag is a great way to showcase the mighty tomato!

Ingredients
3 medium, ripe tomatoes (hopefully local and maybe even heirloom!)1/2 pint ripe cherry tomatoes (hopefully local and maybe even heirloom!)1 ball of fresh mozzarella1 bunch of fresh basil Olive oil for drizzling Balsamic vinegar for drizzling Flaky salt, to taste Freshly cracked black pepper, to taste

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Gently wash the tomatoes and basil.

Get Cooking!

Cut the tomatoes into thick slices and the cherry tomatoes in half.

Arrange the slices of tomatoes on a platter, alternating them with the mozzarella slices.

Tuck the whole basil leaves in between the tomato and cheese slices.

Scatter the cherry tomatoes here and there.

Drizzle with olive oil. Drizzle on the balsamic vinegar and sprinkle with salt and pepper.
