3 cups greek yogurt1 teaspoon vanilla1 lemon, zest and juice1 tablespoon maple syrup1 cup strawberries, sliced1 cup raspberries3/4 cup blueberries

Granola

Ingredients
1 cup oats2 teaspoons cinnamon1/4 teaspoon nutmeg1/4 teaspoon salt1/4 cup coconut, shredded1/4 cup pumpkin seeds2 tablespoons canola oil1/4 cup maple syrup1/2 teaspoon vanilla extract2 tablespoons coconut oil, melted

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat the oven to 325°F.

For the granola, combine all ingredients except maple syrup, vanilla and butter. Mix well, then slowly pour in the vanilla, maple and then butter. Mix until well combined, leaving some clumps.

Spread onto a parchment lined baking sheet and bake in the oven for 20 – 25 minutes, stirring the mixture every 5 or so minutes as it can darken quite easily. Let cool before storing in an airtight container.

Combine the greek yogurt with vanilla extract, maple syrup, lemon zest and juice and mix well.

Wash the strawberries and remove the hull. Slice them thinly.

Wash blueberries and raspberries.

In a parfait cup, begin by placing ¼ cup of the greek yogurt mix. Layer some berries, and granola, then add another ¼ cup of greek yogurt mixture and top with more granola and berries.
