2/3 cup unsalted butter3/4 cup milk chocolate3/4 cup sugar1/2 cup brown sugar4 eggs1 teaspoon vanilla1 cup all purpose flour1/2 teaspoon salt1/4 cup cocoa powder1/4 teaspoon baking powder2 cups red beets, grated

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat the oven to 350°F. 

Place a small pot of water on the stove and bring to a boil. In a heat proof bowl, melt the butter and chocolate while stirring occasionally. Once melted, stir in the sugar and remove from the heat. 

Mix the eggs into the chocolate and butter mixture, adding one at a time and mixing well until fully combined before adding the next egg. Once all eggs are combined, mix in the vanilla and then the grated beets. 

In a separate bowl, whisk together the flour, cocoa powder, baking powder and salt. 

Combine the two mixtures and mix until smooth. 

Get Cooking!

In a muffin tin or silicone mold, use some non-stick spray or grease with butter and scoop the batter in until about ¾ full. Place into the preheated oven and bake for 15 – 20 minutes, or until firm and a toothpick inserted into the center comes out clean. 

Remove from the molds and serve.
