Class Menu: Preserving Summer

What to Expect: Celebrate the height of Ontario’s harvest season with a hands-on preserving workshop featuring one of summer’s most beloved fruits: the peach. Participants will learn the fundamentals of small-batch preserving while creating both a sweet Peach Vanilla Jam and a savoury Peach Tomato Salsa. Along the way, we’ll explore the role of sugar, acid, and heat in food preservation, discuss safe canning practices, and share tips for making the most of seasonal produce.

After preparing and preserving our recipes, we’ll gather around a harvest board lunch featuring fresh sourdough bread, local cheeses, seasonal vegetables, and homemade za’atar pita chips. Participants will leave with recipes, practical preserving knowledge, and jars of summer flavours to enjoy at home.
