In a small pot, bring 2 cups of water and 1 cup of honey just to a boil. Put the violets in a bowl and pour this mixture over the violets and let sit for 15 – 20 minutes.
Juice the lemons and remove any seeds.

Once the violet mixture has cooled, pour through a strainer and press the violets to get as much liquid out as possible.
Combine with lemon juice, mix well, and taste to adjust with more honey or lemon juice.
Place into a pitcher with ice and serve chilled.
