Summer Salad

This simple and fun salad is based around blueberries and honey, a perfect combination!
Serves 6 to 8

For the dressing:

1 cup blueberries2 tablespoons apple cider vinegar6 tablespoons olive oil1 tablespoon honey

For the salad:

2 cups mixed greens or spinach1 cucumber1 cup blueberries1/4 cup sunflower seeds1/4 cup fresh mozzarella, torn

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Combine all ingredients for the dressing, except for olive oil, into a blender and blend until smooth. Slowly pour in olive oil while blending, then remove and check seasoning.

Cut the cucumber first in half horizontally, then into thinly sliced half moons.

Tear the mozzarella cheese by hand into bite sized pieces and place into a bowl.

Get Cooking!

In a mixing bowl, combine the greens with the cucumber, blueberries and sunflower seeds. Toss gently with vinaigrette and top with any remaining ingredients.
