Strained Yogurt and Purslane Salad

Purslane is an incredibly healthy green that most just consider a weed! Mixed up with some yogurt and garlic, this Turkish inspired salad is refreshing and delicious!

3 cups purslane leaves2 cups greek yogurt, strained3 cloves garlic, minced2 tablespoons olive oil1 tablespoon red pepper flakes Salt and pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Remove the roots of the purslane, then wash and drain it very well. Separate the leaves from the stems and use a salad spinner to dry well.

In a separate bowl, combine the yogurt and garlic and adjust seasoning with salt and pepper.

Get Cooking!

Combine the purslane leaves with the yogurt and garlic mixture. Check seasoning one more time.

Transfer the salad to a serving platter and garnish with olive oil and red pepper flakes.
