Spinach and Apple Salad

This salad uses a maple vinaigrette to make a deliciously sweet and colourful dish!

Ingredients
8 cups baby spinach3 crisp apples such as gala or empire4 colourful carrots1 cucumber1/2 cup pumpkin seeds2 tablespoons hemp hearts1 cup cherry tomatoes Pea shoots for garnish

Dressing:

Ingredients
Juice of 3 lemons2 tablespoons honey1 1/2 cups grapeseed oil Salt

Get Organized!

Gather your mise en place; get together all of the equipment and ingredients needed for the recipe before you get started.

Get Prepped!

Dice apples into ½ inch pieces.

Peel the exterior of carrots and peel carrots into long ribbons.

Cut the cucumbers lengthwise into quarters and then dice the cucumbers into ½inch pieces.

Halve the cherry tomatoes lengthwise.

Measure out pumpkin seeds and hemp hearts, gather pea shoots, set all aside.

Measure lemon juice and honey for dressing, and measure oil separately. Set aside.

Get Cooking!

Put lemon juice and honey in a jar with oil. Shake until well combined.

Plate salad. Garnish with seeds, hemp hearts and pea shoots.
