Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Grate the cheese and measure out into a bowl.

Measure all remaining ingredients carefully.

Get Cooking!

In a medium pot combine milk, cream, sodium citrate and spices. Bring to a simmer over medium heat.

Slowly add the cheese one handful at a time while whisking until incorporated.

Once all cheese is combined, taste and season with salt and pepper. Serve immediately with nacho chips or cool in the fridge for later.
