Pumpkin Chili

This chili is packed with flavour and an autumn favourite with turkey and pumpkin!

Ingredients
2 tablespoons olive oil1 pound ground turkey1 onion, diced1 green pepper, diced1 red pepper, diced1 yellow pepper, diced4 cloves garlic, minced2 teaspoons dried oregano2 teaspoons coriander, ground2 teaspoons chili powder1/2 teaspoon clove, ground1/2 teaspoon cinnamon, ground3 tablespoons tomato paste4 cups canned crushed tomatoes1 cup chicken stock2 cups black beans1 cup pumpkin puree1 cup cheddar cheese, grated Salt to taste Pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Dice the onion and peppers into small pieces, about 1 centimeter.

Using a rasp, mince the garlic finely.

Measure all remaining ingredients carefully.

Get Cooking!

In a large pot over medium heat, add the olive oil and ground turkey. Use a wooden spoon to break up the turkey and cook until well browned.

Add the onions, pepper and garlic to the pot and continue to cook over medium heat until all the peppers have softened.

Add the spices and tomato paste and continue to cook for a few minutes. Add the crushed tomatoes, chicken stock, black beans and pumpkin puree and let simmer for about 20 minutes.

Season with salt and pepper and top with grated cheese to serve. Chili is usually better the next day!
