Get Organized!
Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.
Get Prepped!
Dice the onion and peppers into small pieces, about 1 centimeter.
Using a rasp, mince the garlic finely.
Measure all remaining ingredients carefully.
Get Cooking!
In a large pot over medium heat, add the olive oil and ground turkey. Use a wooden spoon to break up the turkey and cook until well browned.
Add the onions, pepper and garlic to the pot and continue to cook over medium heat until all the peppers have softened.
Add the spices and tomato paste and continue to cook for a few minutes. Add the crushed tomatoes, chicken stock, black beans and pumpkin and let simmer for about puree20 minutes.
Season with salt and pepper and top with grated cheese to serve. Chili is usually better the next day!
