Pinzimonio

A fresh and fun dish, pinzimonio is often served at parties and aperitivo where it is eaten like veggies and dip.

Ingredients
6 cups seasonal vegetables Juice of 1 lemon1 tablespoon thyme leaves1/4 teaspoon cayenne pepper6 tablespoons extra virgin olive oil2 tablespoons honey Salt Pepper

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Shave seasonal vegetables thinly and place into a bowl together.

For denser vegetables, (such as beets), blanch quickly in salted water and then transfer to an ice bath to prepare them.

In a separate bowl, combine lemon juice, thyme and cayenne pepper. Slowly pour the olive oil in while whisking constantly. Add the honey, whisking until completely dissolved. Season with salt and pepper.

Toss shaved vegetables with the olive oil mixture and serve immediately.
