Napa Apple Slaw

This delicious apple cabbage slaw is sure to be a show-stopping salad at your next summer BBQ! This slaw is a refreshing and flavourful twist that will have you reaching for cabbage over lettuce for all of your salad needs.

Ingredients
1 head Napa cabbage1/2 sweet apple1 piece ginger, 2", minced1/2 bunch cilantro, minced, stems included1 cup rice vinegar1/4 cup white sugar1 tablespoon coriander seeds, toasted1 tablespoon fenugreek seeds, toasted salt and pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Over medium heat in a small frying pan, add the fenugreek and coriander seeds. Toast lightly for 2 – 3 minutes until fragrant. Let cool and grind.

Thinly slice the head of napa cabbage and place into a bowl.

Use a mandolin to thinly slice the apples, leaving the core. Place these thin slices on a cutting board and using a chef’s knife slice into small strips.

Mince the cilantro finely with a chef’s knife including the stems.

Peel the ginger and use a rasp to finely mince it.

Get Cooking!

Toss all ingredients in a large bowl together until well combined. Let sit at least 15 minutes, then taste and check for seasoning and adjust with salt and pepper accordingly.
