Lemon Garlic Green Beans

This is a quick and easy side that works well to accompany any number of entrees. It works especially well alongside cheesy or creamy dishes, as the brightness of the lemon brings some acidity to cut through the cream.

5 cups green beans, tops removed1 tablespoon olive oil2 cloves garlic, minced1 lemon, zest and juice Pinch of pepper Salt to taste

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Cut the stems off of the green beans.

Using a rasp, grate garlic very finely. Alternatively, mince garlic finely using a chefā€™s knife.

Using a rasp, remove the zest from a lemon. Cut the lemon in half, and squeeze out as much juice as possible, discarding the seeds.

Get Cooking!

Fill up a medium pot with water and bring to a boil. Cook for 4ā€Šā€“ā€Š5 minutes until al dente. Strain the water out of the broccoli and put the pot back on the stove.

Heat olive oil in the pot used to cook the beans over medium low heat. When oil is warmed, add the garlic and cook until fragrant, approximately 60 seconds.

Add the lemon zest and juice to the olive oil and set aside.

Toss the beans in the lemon and garlic olive oil mixture, and season with a pinch of pepper, and salt to taste.
