Giardiniera

This delicious pickled condiment is a mix of the vegetables that are in season, as giardiniera translates as from the garden”. Traditionally, carrots, peppers, cauliflower, and celery are used. This can be served as antipasto, or straight from the jar for a zesty little snack!

Ingredients
1 pound assorted vegetables trimmed and cut into small pieces1 1/2 teaspoons white wine vinegar1 1/2 cups water3 tablespoons suger2 tablespoons salt1 1/2 teaspoons oregano dried1 teaspoon peppercorns whole1 bay leaf

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Peel vegetables if needed (such as carrots). Cut vegetables into small bite sized pieces, about 1 centimetre cubed. If desired, cut the vegetables with a safe chopper to give them a traditional giardiniera look.

Measure out vinegar, water, sugar, salt, oregano and bay leaf into a pot.

Get Cooking!

Bring the vinegar solution to a boil, and make sure all sugar and salt is dissolved.

Pack the vegetables tightly into 4 sterilized jars. Pour the hot liquid evenly overtop of all of the vegetables in the jars, making sure that the vegetables are completely submerged.

Add the lids to the jars immediately. Wait at least 24 hours before enjoying for the best flavour.
