French Folded Omelette

Not your diner omelette, a French Folded Omelette tastes like soft scrambled eggs wrapped in a thin egg shell. It is all about technique, and will take your chef skills to the next level!

2 eggs1 tablespoon butter, cold and cubed Salt to taste Pepper to taste Herbs, chopped (optional)

Gather all of your ingredients and equipment before you get started!

Get Prepped!

Whisk eggs together well with chives, salt and pepper, until the mixture is completely homogenous.

Get Cooking!

Heat a non-stick pan over medium heat. When the pan is hot, add 1 tablespoon of butter and allow it to foam.

Once butter is foaming, add eggs and begin to lightly scramble with a heat proof spatula. Lower the heat if the eggs are setting too quickly. Once the eggs have set on top, turn off the heat and gently fold the omelette.

Alternatively, pick up the handle of the non-stick pan, and hold it perpendicular to the plate. Tap the handle of the pan and allow the omelette to roll and fold on to the plate. Gently shape the omelette into an oval. Enjoy warm.
