Feta Dip

Feta is a salty, crumbly cheese that tastes great with cucumber, sundried tomatoes, and herbs. Made more dippable” with the addition of cream cheese, it’s the perfect summer snack with veggies and crackers.

Ingredients
10 ozs feta cheese, crumbled3 ozs cream cheese, softened at room temperature2 tablespoons olive oil1 teaspoon honey or maple syrup1/2 cup cucumber, seeded and finely diced1/2 cup bell pepper, finely diced3/4 cup sun-dried tomato, finely diced10 teaspoons fresh basil or parsley leaves, torn1 1/2 tablespoons chives, chopped Pepper to taste Salt to taste

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Cut cucumber in half lengthwise, and then again into quarters. If there are large seeds, remove them. Cut cucumber into thin strips, and then dice finely.

Cut bell pepper in half, remove seeds and stem. Cut into thin pieces and dice finely.

Cut sun dried tomatoes into strips, and then dice very finely.

Remove basil or parsley leaves and discard stems. Chop leaves very finely with scissors or a chef’s knife.

Chop chives very finely with scissors or a chef’s knife.

Get Cooking!

In a large mixing bowl, combine the feta, cream cheese, 1 tablespoon olive oil and the honey with the back of a spoon until the cheeses are softened and well-combined.

Add the remaining ingredients, 2 tablespoon olive oil and gently combine.

Transfer the feta cheese dip into a serving bowl. Serve with your favourite vegetables or crackers.
