Dulce de Leche Pudding

1 can sweetened condensed milk6 egg yolks2 tablespoons sugar6 tablespoons cornstarch1 cup milk1/4 teaspoon salt4 tablespoons butter, cold1 teaspoon vanilla

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped

Remove the label from the can of sweetened condensed milk and put into a pot, completely covered with water. Simmer for 2 ½ hours, making sure that the can is completely covered with water the entire time. Drain off and let cool completely.

Measure out all remaining ingredients.

In a medium bowl, whisk together the egg yolks, cornstarch and 1 tablespoon of sugar. Whisk until the mixture turns slightly pale, about 1 – 2 minutes.

Get Cooking!

In a medium pot over medium heat, add the salt, milk and remaining 1 tablespoon of sugar. Let this mixture become hot, but not come to a boil.

Once hot, very slowly pour this mixture into the bowl of the egg mixture, whisking vigorously the entire time.

Return to the pot and place over low heat, whisking constantly until the mixture thickens.

Pass through a strainer then whisk in the cold butter while still hot. Add the can of sweetened condensed milk that had been boiled (our dulce de leche!) and let chill before serving.
