Coarsely chop the chocolate.

Get Cooking!

Put some water into the pot and heat until just steaming. Place the heat-proof bowl on top of the pot and put the chocolate in the bowl. Allow the chocolate to melt slowly, stirring once or twice.

When the chocolate has completely melted, dip the segmented clementines into the chocolate using the forks and transfer to the parchment-lined baking sheet. Sprinkle the dipped clementine pieces with salt immediately. Continue with the rest of the clementines.

Once all pieces have been dipped, set the sheet aside until chocolate hardens. To quickly harden chocolate, transfer the baking sheet to the refrigerator for 10 minutes. Serve at room temperature.
