Chicken Baguette Sandwich with Strawberry Jalapeno Jam and Brie

Sandwich

Ingredients
1 demi baguette1 cooked chicken breast, sliced thinly 6-8 slices brie1/2 cup arugula2 tablespoons olive oil Salt to taste

Jam

Ingredients
1/4 pound strawberries, diced2 tablespoons jalapenos, finely diced2 tablespoons sugar1/2 lemon, juiced

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Remove the green stems and dice the strawberries.

Cut the jalapeno in half, and remove the seeds, stem and white pith.

Cut the lemon in half and reserve one half for another use. Squeeze the juice from 1 side of the lemon.

Measure the sugar for the jam.

Cut the chicken breast into thin slices.

Thinly slice 6 – 8 pieces of brie, enough to cover the baguette.

Measure arugula and olive oil.

Cut the baguette in half lengthwise.

Get Cooking!

In a medium pot, add the strawberries, jalapeno, sugar and lemon juice. Cook over medium high heat for 1015 minutes until mixture is reduced by ½, stirring frequently to make sure it does not burn or reduce too far. Let cool to thicken.

Brush the olive oil onto the inside of the baguette and sprinkle with salt. Preheat oven to 350°F and bake the baguette for 5 minutes until toasted.

Add the chicken and jam in the frying pan and warm up the chicken over medium heat. Place the chicken on the bottom of the baguette, and top with the brie cheese and the arugula.

Cut the baguette in half and serve.
