Cherry Mojitos

This refreshing summer drink takes a fun twist with the addition of cherries. We are lucky enough to have loads of mint growing in our garden, feel free to use any variety of mint you can find, or even lemon balm for a nice twist.

Ingredients
2 limes, cut into wedges (8 pieces), plus 1 for garnish1 cup mint leaves, plus 1 sprig per cup leaves reserved for garnish1 cup cherries, pitted1 cup cherry juice8 cups ice1 litre sparkling water

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Cut two limes in half through the middle horizontally, and then each half into quarters. Cut the second lime into rounds; you need to get 8 rounds of limes out of it for garnish. Cut a small indentation in the lime so that you can stick it onto the edge of a glass for garnish.

Remove the mint leaves from the stem and discard the stems. Save 8 springs of 2 mint leaves for garnish. Rip up the additional mint leaves with your hands into small pieces.

Cut cherries in half and remove the pit, discard the pits. Save 8 cherries ideally with a stem for garnish.

In a blender, mix 4 cups of ice at a time on high speed until crushed. Scrape into a bowl, and brush the other 4 cups of ice.

Measure out cherry juice.

Get Cooking!

In each of the 8 cups, divide 2 pieces of lime, a small amount of mint, and evenly divide the cherries.

Using a wooden spoon or a muddler if you have one, crush the mint with the limes and cherries to release some of the juices and bring out the flavour of the mint.

Divide the crushed ice evenly between the glasses.

Divide the cherry juice evenly between the glasses.

Top each drink with sparkling water and stir to combine the flavours.

Garnish each drink with 1 cherry, a round of lime, and a sprig of mint. Enjoy immediately!
