Carrot Salad

This crunchy side dish is perfect next to burgers or hot dogs. It’s also a great way to add some colour to your plate!

Ingredients
1 kilogram carrots, peeled and grated1/2 cup raisins1/4 cup chives, finely chopped1/4 cup fresh parsley, finely chopped1/4 cup olive oil Juice of 2 lemons2 tablespoons honey1 teaspoon Dijon mustard1 teaspoon cumin, ground

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Peel and grate carrots, placing into a large mixing bowl.

Remove parsley leaves from the stem and chop finely. Chop the entire chives very finely.

In a medium mixing bowl, juice lemons and combine with olive oil, honey, dijon mustard and cumin. Whisk until well combined.

Get Cooking!

In a large mixing bowl combine all ingredients and mix until well combined.
