Beet Slaw

Move over cabbage! Beets are an amazingly tasty veggie that goes perfectly in a slaw!

Ingredients
4 beets, peeled and grated2 green onions, sliced1/2 cup fresh mint, chopped1 3 centimetre piece of ginger, peeled and grated Juice of 1/2 lemon1 tablespoon honey1 tablespoon apple cider vinegar1/2 cup dried cranberries1/2 cup pumpkin seeds

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Remove root from top of beet, then peel and grate them.

Remove the root from the green onion, slice the entire rest of the onion thinly on a slight angle.

Pull the mint leaves from the stem and discard the stem. Roughly chop the leaves.

Peel the skin from the ginger using a peeler or a spoon, then using a rasp, grate the ginger finely into a bowl. In this same bowl, add lemon juice, honey and apple cider vinegar and whisk well until combined.

Get Cooking!

Combine all ingredients in a large mixing bowl and mix until well combined. Serve chilled.
