If using chia seeds in place of an egg, measure into a small bowl and mix with two tablespoons of water. Let sit for 10 minutes while you gather the rest of your ingredients.
Melt the coconut oil and the honey in a small pot until bubbly. Let cool slightly.
Measure the quick cooking oats, rolled oats, and cinnamon into a bowl.
Measure the applesauce and add it into the bowl with the rest of the ingredients. Pour the honey and oil into the bowl. Add the flax egg or 1 real egg and mix together well.
Line the bottom of a baking dish with parchment paper, and spray gently with nonstick cooking spray. Press the mixture into the bottom of the baking dish flat, using an extra piece of parchment paper on top so it doesn’t stick to your hands. The bars should be about 2 centimetres thick, but this will vary depending on the size of your baking dish.

Preheat the oven to 350°F. Bake for 25 – 30 minutes, and until lightly golden.
Let cool completely, slice and enjoy!
