Tuna Tartare

All the incredible flavor’s of a common sushi, without the hassle of rolling! This tartare is simple to prepare and has a ton of fun options for presentation.

Pea Puree

Ingredients
1 cup frozen peas1/2 cup 10% cream salt to taste

Tartare

Ingredients
1 cup sushi grade tuna1 shallot, minced3 tablespoons sweet soy sauce1 lemon, zest and Juice4 tablespoons Kewpie mayo2 tablespoons chives, chopped salt to taste pepper to taste

Assembly

1 avocado, pitted, peeled and sliced3 tablespoons sesame seeds, toasted1/4 cup kimchi crackers

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

For the pea puree, combine all ingredients in a small pot and bring to a simmer. Simmer for 3 – 4 minutes, then blend in a high speed blender until smooth. Pass through a fine strainer and season with salt. Let chill before serving.

Get Cooking!

For the tartare, dice the tuna and combine all ingredients in a bowl. Work quickly and keep these ingredients as chilled as possible. Preferably do this immediately before serving, do not store longer than 1 hour.

For assembly, make a small pool of the pea puree on the plate or bowl of your choice. Place a small pile of tartare, top with sliced avocado, kimchi and half the sesame seeds. Add more tartare mix on top and finish with remaining sesame seeds. Serve chilled immediately with crackers.
