Super Fluffy Omelette

This omelette is so cute, it is just so fluffy! Makes a great surprising breakfast or lunch, this recipe will take your omelette skills to the next level.

2 large eggs, separated Salt to taste Black pepper to taste1/2 cup cheddar cheese, grated (optional) Chives, minced (optional)1 tablespoon butter Maple syrup (optional)

Get Organized!

Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Separate egg yolks from whites, being careful not to get any yolk in the whites.

If using, grate cheese, and chop chives.

Whisk together egg yolks in a bowl with a pinch of salt and black pepper to taste.

In a large bowl, add egg whites and using a clean whisk or a beater attachment of a hand blender, mix until egg whites are fluffy and have formed stiff peaks.

Gently fold the egg whites into the yolks, â…“ of the mixture at a time, until the mixture is mixed together well. If using the cheese or the chives, fold them in now as well.

Get Cooking!

Melt the butter over medium heat in a small nonstick frying pan.

With a spatula, gently spread the egg mixture in the frying pan. Cover it and gently cook until the bottom of the omelette is lightly browned and the top is just barely set, about 4 – 5 minutes.

Carefully slide the omelette out of the pan, and fold it in half on a plate. Serve with maple syrup if you would like a sweet omelette.
