Super Fluffy Omelette
Gather your mis en place; get together all of the equipment needed for the recipe and gather your ingredients.
Separate egg yolks from whites, being careful not to get any yolk in the whites.
If using, grate cheese, and chop chives.
Whisk together egg yolks in a bowl with a pinch of salt and black pepper to taste.
In a large bowl, add egg whites and using a clean whisk or a beater attachment of a hand blender, mix until egg whites are fluffy and have formed stiff peaks.
Gently the egg whites into the yolks, ⅓ of the mixture at a time, until the mixture is mixed together well. If using the cheese or the chives, fold them in now as well. fold
Melt the butter over medium heat in a small nonstick frying pan.
With a spatula, gently spread the egg mixture in the frying pan. Cover it and gently cook until the bottom of the omelette is lightly browned and the top is just barely set, about 4 – 5 minutes.
Carefully slide the omelette out of the pan, and it in half on a plate. Serve with maple syrup if you would like a sweet omelette. fold
