Strawberry Goat Cheese Flatbreads with Arugula

These flatbreads make for a really quick and easy lunch or dinner. You can make your own flatbreads, or use prepared naan bread for a quick shortcut.”

Ingredients
2 naan bread1/2 cup strawberries, sliced thinly olive oil for brushing1/3 cup goat cheese, crumbled2 tablespoons reduced balsamic vinegar1 cup arugula salt to taste pepper to taste

Get Organized!

Gather your mise en place; get together all of the equipment needed for the recipe and gather your ingredients.

Get Prepped!

Preheat the oven to 400°F.

Thinly slice the strawberries, and crumble the goat cheese.

Brush the naan bread with olive oil, and scatter strawberries on top of the naan. Scatter goat cheese overtop and season with salt and pepper to taste.

Get Cooking!

Bake naan for 8 – 10 minutes until strawberries are juicy and goat cheese is melted. Drizzle with balsamic glaze. Toss arugula in a bowl with a splash of olive oil and a pinch of salt. Top the flatbreads with arugula, cut into wedges and serve.
